The Leibniz Institute for Food Systems Biology at the Technical University of Munich (LeibnizLSB@TUM) is a prominent member of the Leibniz Association. The working group Food Biopolymer Chemistry is currently looking for a committed master’s student to work on a project supervised by Kim Lorenz and Prof. Dr. Katharina Scherf as part of a master's thesis. The time frame for the thesis is six months.

Master’s Student (m/f/d) – Thesis


The Leibniz Institute for Food Systems Biology at the Technical University of Munich (LeibnizLSB@TUM), a legal foundation under civil law based in Freising, is a prominent member of the Leibniz Association. Our institute integrates cutting-edge biomolecular research, bioinformatics, and high-performance analytical technologies to explore the complex interactions between the human organism and food components.

„Proteomic Profiling of Immunoreactive Peptides and Gluten Digestibility in Cakes Following Simulated In Vitro Digestion”
Duration: 6 months

To strengthen our Food Biopolymer Chemistry working group, we are currently looking for a committed master’s student to work on a project supervised by Kim Lorenz and Prof. Dr. Katharina Scherf as part of a master's thesis. The topic of the thesis is “Proteomic Profiling of Immunoreactive Peptides and Gluten Digestibility in Cakes Following Simulated In Vitro Digestion,” or “Proteomics Analyse immunreaktiver Peptide und der Glutenverdaulichkeit von Kuchen nach simulierter in vitro-Verdauung.” The master's thesis can be written in either German or English. The time frame for the thesis is six months.


Key Responsibilities:

• Planning a study to investigate cakes with different ingredient ratios, including baking the cakes
• Planning and conducting in vitro digestion experiments in the laboratory
• Preparing samples for mass spectrometry measurements
• Evaluating mass spectrometry measurements
• Compiling findings in a scientific master’s thesis


Ideal Applicants Must Have:

• Student specializing in food chemistry, biochemistry, nutrition and biomedicine, or related fields
• Ability to work independently and carefully in a wet chemistry lab
• High level of commitment and strong academic achievement
• Good English skills
